A Shrove Tuesday Twist

Ugandan Rolex recipe

A recipe for simple and delicious pancakes, Ugandan style.

How will do you celebrate Shrove Tuesday? Will you grab a pan and have a go at flipping your own pancakes? Do you prefer lemon and sugar? Or will you be reaching for the chocolate spread?
 
This year, why not add some East African flavour to your Pancake Day by serving a Ugandan twist: a mix between pancake and omelette, Ugandan Rolex are a breakfast luxury that can be purchased on any street corner.  They are available everywhere, in restaurants and in the market at street vendors, pre-prepared and ready to eat. Rolex is basically a chapati, rolled up with seasoned scrambled eggs, or maybe cabbage and tomatoes inside – sometimes all three. It is cheap, oh-so-tasty, and you can now experience Ugandan Rolex right at home!
 

Ugandan Rolex Traditional Recipe:

Ingredients:

(Makes 1 Rolex)

  • 1 large, or 2 small chicken eggs
  • 1 large thinly-rolled Chipati 
  • 1/3 cup shredded cabbage
  • 1/4 cup diced tomato
  • salt, to taste
  • Olive Oil
Making Rolex Directions:
  1. Break egg(s) into a shallow cup, add pinch of salt, and beat with a fork.
  2. Pour the eggs onto a large (preferably iron) saucepan into a thin 8″ circle.
  3. Use a large spoon to rotate the eggs for even cooking. Flip once. Cook until the eggs are cooked through.
  4. Lift eggs with a spoon and place the chapati underneath the eggs and warm together for 10-20 seconds, rotating if cooking surface has uneven temperature.
  5. Remove egg-covered chapati from heat.
  6. Along the centre of the chapati (but to the right side) sprinkle a stripe of cabbage, and slightly overlapped tomatoes.
  7. Sprinkle another pinch of salt over toppings.
  8. Now roll the chapati up. Bring one side over far enough to tuck in the toppings, then fold the other side up and over to seal.
  9. If you are going to eat your Ugandan Rolex on the go, wrap it in some plastic wrap, open at one end, to keep it from dripping on you.
